Ingredients:

  • 2 kg oxtail pieces

  • 2 onions, chopped

  • 3 garlic cloves, minced

  • 2-3 carrots, peeled and sliced

  • 2-3 celery stalks, chopped

  • 2-3 potatoes, peeled and cubed

  • 2 tomatoes, chopped

  • 2-3 bay leaves

  • 2-3 sprigs of thyme

  • 2-3 sprigs of rosemary

  • 2-3 cups beef stock

  • 1 cup red wine (optional)

  • 2 tablespoons tomato paste

  • Salt and pepper to taste

  • Cooking oil or butter for browninglicious gravy.

Instructions:

  1. Heat a bit of oil or butter in a large, heavy-bottomed potjie pot or Dutch oven over medium-high heat.

  2. Season the oxtail pieces with salt and pepper. Brown the oxtail in batches, ensuring all sides get a nice sear. Remove and set aside.

  3. In the same pot, add a bit more oil if needed. Sauté the onions and garlic until they turn translucent.

  4. Return the oxtail pieces to the pot. Add the chopped carrots, celery, potatoes, tomatoes, bay leaves, thyme, and rosemary.

  5. Mix the tomato paste with the beef stock and pour it into the pot. Add the red wine, if using. Stir everything together gently.

  6. Bring the potjie to a gentle simmer, then reduce the heat to low. Cover the pot with its lid or use foil to seal it tightly.

  7. Allow the Oxtail Potjie to simmer slowly for 3 to 4 hours, or until the oxtail is tender and almost falling off the bone. Stir occasionally and add more liquid (water or stock) if needed to prevent it from drying out.
